I am flying from N14 to Gatlinburg, TN (KGKT) in mid-April for an
anniversary trip with my wife. My wife HATES turbulence and asked me to do
everything in my power to mitigate it's effects on our flight.

3) as high as the clouds and plane will let me

like: N14 MGW WVA Direct KGKT.

I'm going to try and go VFR if possible so that I can pick the routes and
altitudes with the best chances of decreasing any turbulence.

If you pick a day with light winds aloft (ie 20 knots), and you climb
to 12,000ft, I doubt you will encounter any turbulence along this
route.
