my guess:

mit EZ = mit Einziehfahrwerk = with retractable gear
ohne EZ = fixed gear

All parts of the name of a gilder that start with an $ are the names of
the variables that contain the language specific strings to be displayed
for the users. Unfortunately the new team had no time to implement this
feature in OLC2 until now.
