No, they don't have any jurisdiction over planes in flight.

I've had to register my plane in several states, had to pay state taxes
and I was also subject to local governement laws.

None of which have anything to do with the in-flight operation
of aricraft, which is under the sole jurisdiction of the FAA.

I was also forced to register myself in each state.

Which state(s) , and for what exactly?
