Unfortunately, there is not enough information in your post to give you a
very definitive answer. Here in the United States there are more than 6000
pilots who volunteer under the banner of Angel Flight to help with
humanitarian missions. The consist of everything from helping patients get
to medical treatment by air, to transporting blood and human organs, to
providing transport of medicine and supplies in times of national
emergencies. Unfortunately, I am not aware of similar organizations
operating in Italy.

If you are interested in doing this full time for a period, then there are
a number of international organizations (Doctors without Borders, Wings of
Hope, etc.). I would suggest you contact AOPA Europe www.iaopa.org with
your question.
