I'm considering setting-up a video system for aerobatic lessons to
record the stude and the aircraft's attitude - ideally 2 or 3 tracks
concurrently.
What experiences have people had with video cameras during g loading? is
any camera regarded as better or worse under aerobatic conditions?
Has anyone found a way to multi-track?

Also, how about ways to mount the camera?

I've had pretty good luck with a Sony digital camcorder mounted in my Extra
using a Bogen clamp mount. It is a heavy duty mount that held tight up to at
least 6+ G.

I used a separate lipstick mini camera for video input, mounted to my
helmet, but of course it could be mounted anywhere. I'm not sure whether
multitracking is possible with one camera, or whether you would need to put
two tracks together with some editing software like Adobe Premier.

Did you get any closer to a Multi-Track solution?

Best regards

No, unfortunately life got in the way and I haven't had chance to
progress this at all.
