Default Reading material & flight recordings for FS2004?

I would like to read about the operation of FS2004 and about how to fly the
aircraft. Longer articles are better.

I would like to review flight recordings too if anyone has them or knows
where to download them.

Is there any way to spectate someone else flying? I know there is online
play. Maybe as a passenger? I would like to observe how the complex
instruments are manipulated.

Thanks in advance for any answers. If my questions are too vague, please
just nevermind.
