I meet their criteria as a current, instrument rated, 300 hr pilot, but I
don't know how much use they would get from me as a renter, not owner.
Anyone here able to enlighten me?

I'm a rental pilot too, and I often fly for Angel Flight.

Do they cover the cost of the rental? I'm not sure we have this type of
thing here in Australia.

Nope. All expenses are covered by the pilot. (The expenses do constitute a
tax-deductible donation, however.)

Fair enough! Are you allowed to log the hours?

Yes, Angel Flight gets the "hands off" treatment from the FAA.
AngelFlight was even flying VFR after 9/11 when only 135 was allowed to
fly VFR.

As an example, Angel Flight South Central has pilots that run the
entire gamut. We have a pilot with a King Air. Another has a turbine
helicopter. Still another has a Lear Jet (okay, it's not his - but the
owner lets him use it for AF if it is deadheading back). And we have a
LOT of pilots who rent 172's and Warriors and the like. Some are
college kids that have to pick up empty pop bottles on the side of the
road to get enough deposits back to get a couple of C-172 rental hours
- maybe fly one mission a year.

Doesn't matter. Each and every one of those missions helps someone,
and every one of them is equally appreciated.
