For a one-off free-blown canopy for a vintage glider, I'd send the old
canopy and frame to Todds Canopies in Florida.

For modern sailplanes where the profile match to the fuselage is
critical for aerodynamics and aesthetics, I'd order from whoever has
the factory tooling or its equivalent. A free-blown canopy can get you
into the ballpark, but I rarely see a good profile match on those.
