Why don't they call it "Gehackte Fleishen" or something like
that? (My German is nicht so gut.)

"Gehacktes Fleisch" (chopped meat). "Gehacktes" is just a
short form of "gehacktes Fleisch" that has become a synonym
for chopped meat with an egg.
