It would be good to get kids involved in flying by conducting a paper
glider competition. This gives them a chance to actually participate
rather than just observing. Open the competition only to those who
are under the age to obtain a pilot's certificate, and have separate
competitions for different age groups and flight performances such as
duration aloft, distance flown, most unique, best decorated, ... Offer
a lot of prizes, so that many participants feel like they had a
positive experience at the airport, and take home something to
continue to remind them of their aviation related success.

Try to arrange for reasonably priced demo/sightseeing flights for
adults to lure them into the air in a GA aircraft for the first time.
Perhaps some of the neighboring FBOs will be interested in having
flight instructors and aircraft at the event for these flights.

ANG and CAP should be represented.

Try to get some decent food venders instead of the usual junk. If you
can find a BBQ company to set up a few portable grills with try-tip,
links, ribs, etc., that would be great. On the other side of the
equation, try to find a salad vender with a varied menu of tasty
creative salads. And don't forget to invite the local gelato (as
opposed to ordinary ice cream) shop to participate.
