Difficult question - I can think of about a dozen a/c all for
different reasons:

Lancaster, B17 for same reasons as Keith's.
DH Mosquito - some wood, some qlue and 2 bloody great merlin engines -
brilliant!
This one'll come up a lot - P51 Mustang. Kick arse fighter and not bad
looking either.
TSR-2: Beautiful aircraft (Britain's Avro Arrow!) 2 Concorde engines
on an a/c 1/6th of the weight. Would probably have stayed state of the
art into the 90s (ok, slight exaggeration) Shot down not by a SAM, but
by a MacNamara/Heally(?)curve ball.
DC-3 Dakota - Lancasters, B17s etc might have bombed, but the DC3 did
a lot of the donkey work!
B-52: 50 yrs old and still going strong.
The Harrier: did 40 yrs ago what the JSF is doing today (...again
slight exaggeration). and without it the Falklands would be the Islas
Malvinas.
