The wing fittings have plastic rods to hold the spar end - I have always assumed this is "delrin" but of course when I look into what is available there are a zillion plastic types! What is the best choice? Or does it not really matter as long as it's softer than the spar bushings?

I does not matter much. I make pins like that out of PVC rod because it is readily available, machines easily and has no negative properties for this application.
I just made a set for a Komet.
