Doesn't the vehicle get lighter as fuel and oxidizer are consumed,
requiring less thrust, lowering the consumption rate...

Exactly, but the basic rocket equation takes that into account:

Fuel = Initial Mass * (1 - 1/(e^(Delta-V/(ISP * g)))
