I've been doing this for a few years now, and IMO it's easier to fly using a VOR than a GPS. With a VOR, you just tune the frequency, set the OBS to the correct radial, and keep the needle centered. That's all there is to it. A GPS, OTOH, can be very complicated to set up, especially for an approach. Different brands have radically different user interfaces, and different ways of setting things. It takes far more effort and practice to use a GPS than a VOR, especially if you find yourself in an aircraft with a different brand installed than the one you're used to. It's very easy to get into a lot of trouble setting up the GPS.
